Start a salted pot of water to boil. Stir fry tofu, ginger and/or peppers and/or garlic about 5 minutes in sesame oil and tamari. Once tofu starts to brown, add scallions and greens of your choice. Cook soba noodles 4 minutes then drain.
Simple summer supper. Soba. So, there.
