Mix 2 cups of chopped fresh baby kale with your favorite salad dressing to taste. Mix in
1 cup of quinoa (cooked 10 minutes with 2 cups of water), 1 can of. white beans, and 1 cup of toasted walnuts, pine nuts and/or pumpkin seeds. Salt and pepper to taste. Refrigerate. Don’t hate.
