The Big Salad

It's a hot summer night and you have not been grocery shopping. But you do have carrots, asparagus and romaine lettuce. Lucky you, it's big salad time, so don't order in. Chop up the lettuce and drizzle some lemon juice and olive oil, quick-grill carrots and then asparagus (done here on a panini press with olive oil and Za'atar). Let them cool or stick them in the freezer for a few minutes before mixing them with the lettuce. Grill some pita or other flat bread if you've got some. Done. Big salad.
