I always wanted to be a person who could make a great curry. I tried once in law school and it was a fail. I hazarded some guesses and they were just wrong. Probably because I had no idea that coconut milk was easy to buy and easier to cook with--no internet, no food bloggers--just a mess. I never tried it again until Shelley and I started working on this book. I still can’t believe how good and simple it was and how much I enjoyed doing it. Shelley’s easy recipe (p.43) got me past it.
