What do you do when you have a guest for dinner who's a great cook? Don't be intimidated! Make something you learned from that person! Here's a simple smoked trout salad. I had fancy smoked trout in the fridge along with some greens and a ripe avocado. So, all I did here is whip up the dressing that my guest taught me to make last time he was at my home: Smash a clove of garlic, mince, then smash again with a tsp coarse sea salt until it is a paste. Combine with one tbsp apple cider vinegar and 2 tbsp olive oil. Good to go!
